And Just Like That, It’s Another School Year

I can’t believe that the lazy days of summer are over and the kids have been in school for a full week. I am full of optimism for this new school year. I now have a 4th grader and a 7th grader (first time middle schooler!), so I feel like an old pro at lunch making.

Here is how the first week went:

I’ll admit that the first day of school snuck up on me. It was the day after my daughter’s dance recital and it coincided with the epic solar eclipse (which wasn’t so epic here), so there was a lot going on. For lunch, I stuck to a classic combination: peanut butter, Nutella and banana (quite possibly the greatest sandwich ever) with some crunchy veggies and a little farmers market apple.

On Tuesday, my son actually tried school lunch for the first time ever. He was underwhelmed by the “street tacos” so I’m not sure if he will by buying lunch at the middle school too often. For Lily’s lunch, I made a ham and cheese sandwich with butter and pea sprouts.

My kids are crazy about these salami sticks that come in two-pack at Trader Joe’s, so I typically throw them into a lunch at least once a week. On Wednesday, I also included a little sandwich with edamame and hummus, half a super sweet lipstick pepper, some plums and nectarines and parmesan Goldfish with almonds.

I was motivated to try something a little different for lunch on Thursday. I folded a tortilla around some sliced ham and guacamole to make a little pocket of yumminess (a little cheese glues the edges together). These were a big hit with the kids, so I think I’ll be making more tortilla pockets in the future.

On Friday, the lucky kiddos got sandwiches made on pretzel bread filled with leftover grilled cod fish and sprouts. How yummy does that sound? Whew, we survived the first week of school.

 

The Last Week of School Lunches

I don’t think it has quite sunk in yet that the 2015–16 school year is over. Craziness! The week started out well enough, but then poor little Lily was hit with a nasty stomach bug and actually missed the last two days of school. She was super bummed to miss the fun [completely non-academic] days, but at least she’s on the mend and can enjoy her first day of summer vacation.

As for lunches, we’ll be posting sporadically this summer, and I’ll be attempting to get the kids more involved in cooking. Expect updates on that to come. We’re off to a good start with Lily’s new found obsession with America’s Test Kitchen, the ultimate nerdy cooking show. I just love Christopher Kimball and his cute bowties!

We started the week with a sweet sandwich tasting: Nutella, jam and butter, and peanut butter and fluff on pretzel rolls. Yum! I also made a fruit salad out of fresh pineapple, apricots, yellow nectarines and super sweet white nectarines.

We kept with the fluffernutter theme on Tuesday, and I made Nutella, peanut butter and fluff bagels. It was a hot week, so the kids requested lots of fruit and I obliged with more stone fruit, pineapple, and a nice kiwi.

Wednesday was class party day, so no lunch was needed.

For the last day, I wanted to make a lunch that Iain would really love. I whipped up a batch of chocolate pudding (Jello instant, nothing fancy—made with organic whole milk) and served it with peanut butter-filled pretzels, kiwi, and white nectarines.

Friday Kid’s Choice Lunch

Last night, the kids wanted to help make their lunches, which was great, even if this meant that making the lunches took about three times longer. Of course, the both wanted slightly different things: Iain went heavy on the fruit (orange and mango):
