This was a pretty good week of lunches for the kiddos: lots of variety and plenty of delicious fruit. We got some particularly delicious mangoes and a big, sweet honeydew that the kids have enjoyed throughout the week.
It’s always a challenge to get back into the school routine after having an entire week off for Thanksgiving break—especially when that break includes a trip to Disneyland followed by the making and consumption of way too much food. The first few lunches of the week were typical lazy mom affairs made with minimal fuss and effort.
For today’s lunch, I put in a little more effort and made the kiddos a nice hummus (edamame hummus from Trader Joe’s) and veggie lunch with multi-colored carrots, quick boiled green beans and baby bell peppers. I also included some delicious Ritz crackers, grapes, dried apricots, and Trader Joe’s adorable little mini mint chocolate star cookies.
Today’s lunch is full of goodies from a recent trip to Trader Joe’s. The tortillas are stuffed with edamame hummus, shredded carrots and microgreens—all from TJ’s. The salami snack sticks are a new favorite with the kids. They come in little twin packs that look like this:
Those crazy looking chunks of white melon are from a snow leopard melon. I saw these little melons for the first time at Trader Joe’s. The flavor is somewhat similar to a honeydew, but slightly more floral. It’s delicious! The trail mix also contains a new TJ’s treat: candy coated drops with natural dyes (hippy M&Ms).
