Iain’s Monday Sandwich: Ham and Hummus with Shredded Carrots and Lettuce

I asked for Iain’s input when making lunch this morning. First he requested a smoked turkey sandwich. Sadly, we had no smoked turkey. Then he requested a BLT. Sadly, we had no bacon and even if we did, there was no time to add bacon cooking to the morning routine. I told him we had ham and hummus, though. That little sandwich genius came up with this combo: ham, hummus, shredded carrots and lettuce (yes, he actually requested lettuce). I used some pretty big slices of whole wheat bread, so each kid got half a sandwich. Doesn’t this lunch look delish?

  1. I’ve never thought of adding shredded carrots to a sandwich. That is pure genius. I suppose I may have hesitated because the carrot bits would fall out but to the rescue is the hummus that keeps everything glued together. Simply genius.
