Yesterday I got it in my head that I just had to make pupusas. I first discovered pupusas when visiting my amazing and glamorous college roommate in El Salvador. There were several El Salvadorans who lived in my dorm and they were all incredibly smart, gorgeous, sweet, fit, and well dressed. But, I digress. Back to pupusas: which are little fried masa patties filled with cheese, beans, and all sorts of yummies. On the way home from work (while procrastinating from my end of the quarter grading), I picked up a bag of masa and a bag of pintos. A few hours later, I was stuffing little masa balls with a filling of beans, spinach, corn, cheese and cilantro. That delicious filling was repurposed for today’s lunch in the form of little quesadilla triangles. I made a fruit salad with nectarines, pluots and blueberries to go with the quesadillas. Yum!
