Last night, we had pancakes for dinner. Don’t tell. I made the protein pancakes I’ve been obsessed with lately: 2 cups of oats, a container of cottage cheese and a small carton of egg whites. Blend it all up in the Vitamix and you have the easiest pancake batter ever. This time, I made the pancakes even more delicious by adding in a super ripe (pretty much black) banana, a big handful of spinach, another big handful of shredded coconut, and some cinnamon and vanilla extract. I thought these pancakes were perfection, but then the kids complained that there were no blueberries and chocolate chips. So, with the second half of the batter, I stirred in those goodies. A couple of leftover pancakes made their way into today’s lunches—along with some fruit salad, mixed nuts (in the little chick container), and a chia bar.
