I can’t believe it, but today is the final Friday of the school year. Next week is the last week of school and the kids are done on Thursday. Next week is also finals week at Cal Poly, so the kids and I will be finishing our academic years at the same time. What a relief! I’ve only got four more lunches to pack this school year. For lunch today, I packed little tostada triangles topped with refried beans, salsa and cheese. Some of the tostadas also have guacamole. These little goodies are left over from last night’s Slacker Mom Tostada Dinner. I love that tostadas are basically yummy fillings on top of a gigantic corn tortilla chip. I tend to have little containers of pinto beans, shredded pork and such in the freezer for whenever I need a Slacker Mom Dinner Night (usually on the dreaded Thursday empty fridge nights).
