Today’s lunch has some hearty quesadillas filled with leftovers from yesterday’s Cinco de Mayo dinner of pork carnitas with black beans and guacamole. I love to make pork carnitas, but not on a Tuesday in the middle of a crazy busy week. So, last night, it was Trader Joe’s to the rescue. A packet of pork carnitas + a jar of Hatch Chile Salsa = one yummy dinner. All I had to do was throw some black beans in the crock pot and smash up some avocados: totally doable on a Tuesday.
