Yogurt and orange marmalade is a current kid-favorite in our house. Over the weekend, I made a big batch of granola and decided to keep with the orange theme by adding the zest of one orange to my granola. Delicious! Why didn’t I think of this sooner? We have two orange trees in our front yard and I’m always try to find new ways to use oranges. The marmalade is store-bought, but clearly I need to start making it from scratch. I also included some bright veggies in this lunch: little baby carrot coins and grape tomatoes. I found an almost empty bag of teriyaki beef jerky in the fridge, so in went that (a little random, I know). Then I threw in a date, because I just got a bag of incredibly sweet dates at the farmers market, and we have been eating them like crazy. They are REALLY GOOD when they’re fresh.
