On Sunday I got motivated to make some pumpkin bars. Okay, maybe it was more procrastination than motivation: baking pumpkin bars was preferable to mopping the floors. I found this easy and relatively healthy recipe for pumpkin chocolate chip oat bars. These pumpkin goodies turned out to be a big hit with the kiddos. Iain inhaled three of them before dinner, because he’s an eating maniac. For lunch today, I mixed plain yogurt with homemade apricot jam, blueberries and a little spoonful of chia seeds for a sweet and tart bowl of yumminess. I also include a pumpkin bar, of course, and slices of pretzel bread with parmesan cheese.
