My kids just love olives. And they love pizza. For this lunch, I spread some marinara sauce and olive tapenade on slices of whole wheat skinny bread. I didn’t have any mozzarella, so I used shredded cheddar and smoked gouda for the cheese topping. Mmm, fancy tapenade + fancy cheese = yummy pizza. As luck would have it, we still have a bunch of cherry tomatoes growing in our garden, so I threw some of those, along with some carrot sticks, into the lunch box. Some crunchy pea snacks and pretzels round out this fun lunch.
