My kids are crazy about tuna salad, as long as it is loaded with pickles and “not too wet.” For yesterday’s lunch I made tuna salad—loaded with pickles, not too wet—on whole wheat skinny bread (I think the real name is Sandwich Thins®, but I prefer skinny bread). The kiddos never seem to do well with sandwiches made on thick slices of bread. I think the carb to filling ration is off for them, and they prefer these thin, dainty breads to big ol’ slices of whole wheat bread. Whatever works. For crunchy snacks, I packed some plantain chips and the ever popular crispy pea snacks (Trader Joe’s Contemplates Inner Peas).
