If you just say the word “ramen” in my house, the kids come running. They love ramen noodles, and, as I predicted, this ramen noodle salad was a big hit in yesterday’s lunch. I boiled a pack of ramen noodles with some frozen corn and edamame. Then I tossed it with diced teriyaki chicken (leftover from dinner), spinach and the soy sesame dressing I always have in the fridge. The finish off those lovely noodles, I gave them a big sprinkle of black pepper. I also had some of these noodles for my lunch—mixed with a nice pile of romaine lettuce and some steamed beets. For side dishes in the kids’ lunches, I went with carrot sticks, sliced jicama and rice cracker trail mix.
