Here’s a sweet lunch to celebrate the end of the first week of school. I mixed some yogurt and sweetened strawberries with chia seeds to make a nice, thick yogurt pudding, and then I piled more strawberries on top. The other day when I made banana zucchini mini muffins, I also made a mini loaf of banana zucchini bread. I made little Nutella sandwiches with that delicious bread. This lunch also needed a few snacky things, so I included: dried apricots, plantain chips, candy coated sunflower seeds and almonds. Happy Weekend!
