First Day of School

Well, and just like that: summer is over. It seems like I was just packing lunch for the last day of the school year, and, now, with no fanfare, I’m at it again.

I didn’t do anything elaborate for today’s lunch: just a nice fruit salad (strawberries, pineapple and cantaloupe) and a couple of spinach pizza roll-ups. The kiddos always love pizza roll-ups: just spread a whole grain tortilla with some marinara sauce, toppings of your choice and some shredded cheese, roll it up tightly and bake at 375ºF until crispy and golden. Yum. I should make this more often for my lunches when I go back to school.

Although I wasn’t motivated to make a fancy first day of school lunch today, I did make new lunch bags for the kiddos’ Planetboxes. This was a major sewing project with all sorts of complexity (insulation layer, lining, mixing and matching patterns, etc.), but the end result is totally worth it: cutest lunch bags ever.
