This morning I realized that, oh yeah, I didn’t make lunch last night because I was too lazy. I almost always pack lunches the night before, because the mornings can get a little frantic. When I make lunches in the morning, I have to think and move fast, which is usually not possible for me until I’ve consumed at least half a cup of coffee and put on some under eye concealer. So, coffee in hand, I sped through the kitchen and quickly threw together this lunch. Sandwich: sunflower seed butter, apricot jam, and there may be a little Nutella in there. Yummy sides: honey yogurt, grapes, and celery sticks with a little container of cookie butter. I am not a big celery fan, but I could eat a piece of cardboard if it was dipped in cookie butter. Luckily the kiddos also like straight up celery. Although, that didn’t stop Iain from asking for a bigger container of cookie butter next time.
