After my mini [working] vacation in Minneapolis, I returned home to a pretty empty fridge and a sad looking fruit bowl (a couple of black bananas, a few apples and some sad looking limes). I decided to use the black bananas to make a little batch of vegan banana muffins with mini chocolate chips. Because I didn’t have much fresh fruit to add to this lunch, I raided the pantry for assorted dried items and found: dried apricots, dried blueberries, freeze-dried mango (which has a crazy intense mango flavor and a somewhat sticky, chalky consistency) and freeze-dried strawberries. I also found a bag of muesli, which I decided to serve with some yogurt, applesauce and honey. Mmm, muesli. Mmm, banana muffins. Mmm, breakfasty lunch.
