For reasons unknown to me, the kiddos seem to prefer cold quesadillas to sandwiches for lunch. We might run out of bread, but there is almost always a package of tortillas in the fridge. Growing up, tortillas were a staple in my house. One of my favorite after school snacks was a peanut butter filled tortilla microwaved for 30 seconds. Insanity, I know—and muy gringo. I guess my kids are like that now: they will eat just about anything in a tortilla. Like black beans and tofu, which are smashed inside of these quesadillas. I was too lazy to make pico de gallo, so, instead, I chopped up some tomatoes and tossed them with a little chile limón seasoning. What else goes with black bean tofu quesadillas? Why, Parmesan Goldfish and applesauce of course.
