Today’s lunch was a big hit with the kiddos. And what’s not to love: whole grain pumpkin pancakes (leftover from Sunday’s breakfast) with a sweet filling of sunflower seed butter and honey. Because I love applesauce and pancakes, I also included a little container of unsweetened applesauce with cinnamon. The little bento frog is filled with baby lima beans. I absolutely loved lima beans as a kid and I hadn’t eaten them in years. On a whim, I picked up a bag in the frozen section and served them one night at dinner. The kids were very excited about lima beans—like edamame, but different (and cheaper). And just like edamame, they taste great with a little extra salt sprinkled on top.
