Sometimes Friday’s lunch has to be nice and simple: like quesadillas with super sweet cherry tomatoes from the garden and some refreshing cantaloupe. The quesadillas are filled with a little smoked turkey, salsa and cheese. Yum.
This was Lily’s first week of long kindergarten days and actually eating lunch at school. She seems to be holding up well, except for big sad nervous eyes every morning at drop-off. Kindergarten is overwhelming—for parents and kids. There is some much wondering and worrying: What’s happening? Is everything okay? Are multiple kids having meltdowns? How’s that whole phonics thing going? Ah, well. All I can control during the school day is what the kiddos have for lunch. I’m just trying to make sure that their little bodies are fueled up for learning.
