Today’s lunch is a quick and easy one: quesadillas filled with black bean hummus and shredded cheese with veggie chips and grapes on the side. I got the veggie chips at Fresh & Easy; they are an in-store brand called Roasted Garden Vegetable Crisps. They are a little bizarre—kind of freeze-dried, kind of baked tasting. I’m not sure if I’ll buy them again, although they may grown on me. The kiddos “kind of” like them, although probably not as much as good old fresh veggies. It’s hard to beat Mother Nature.
