Although today’s lunch is somewhat monochromatic, lack of color does not indicate a lack of yumminess. Mmm, just look at those kabobs: golden baked tofu and pineapple chunks. I tossed the tofu in a little soy sauce and baked it in a 350˚ oven until nice and brown all over. I made the tofu for dinner last night, which was a super delicious lemongrass rice bowl concoction. In the big container is some plain yogurt with Crazy Good Granola and honey. The last time I made Crazy Good Granola, I made a double batch, because, well, it’s that good. The little curly cue things are Crunchy Curls from Trader Joe’s. Crunchy Curls are “a tasty potato and lentil snack.” They are seriously addicting. The treat today: a few sweet cinnamon almonds. This lunch is a really nice mix of sweet, savory and salty.
