Today’s lunch was tossed together quickly after a fun-filled Mother’s Day at Avila Beach. The weather was perfect, we had good friends visiting, and the kiddos entertained themselves by harvesting a big, smelly pile of seaweed. What could be better?
When it came time to pack lunches, I transformed some leftover sourdough rolls from lunch into little mini pizzas. Because I was relaxed and lazy, I tossed in some pre-made tropical trail mix. Once I cut up some strawberries and nectarines, the lunch was complete and I was able to have a glass of red wine and a dinner that I did not have to cook. Hopefully, your Mother’s Day was as fantastic as mine!
