This is the last lunchbox of the week, because tomorrow we have an elementary school family picnic and walk-a-thon. I’m still trying to come up with some sort of elegant picnic lunch plan. Last year for the family picnic, I went all out: hot out of the oven whole wheat rolls with mixed berries and butter, two kinds of cheese (one was probably Dubliner), smoked sardines (which, inexplicably, the kiddos love), sliced carrots, edamame, and some sort of fruit salad. I may be less ambitious tomorrow. Lunch today is pretty simple: a Dr. Praeger’s California Veggie Burger and some Dubliner cheese smashed between two slices of whole wheat bread and grilled in a little olive oil. I don’t know who Dr. Praeger is—or, if there even is a real live Dr. Praeger—but I love his burgers. You can see actual chunks of veggies in them. These burgers aren’t trying to be fake meat; there’s no weird textured vegetable protein in them. But, most importantly, they taste great and the kiddos gobble them up. To complete this yummy lunch, I added some pretzel slims and orange slices. The treat is a tiny little chocolate filled with butterscotch sea salt caramel.
