Today’s lunch features one of my all time favorite sandwiches: smashed avocado with Dubliner cheese, mayo and a sprinkling of salt and pepper on whole wheat bread. This is a great vegetarian sandwich for kids and grownups alike: it’s hearty and delicious with lots of great flavor going on. And, about, Dubliner, man oh man do I love this stuff.
As the package accurately claims, Dubliner is an “aged cheese with a distinctive taste and a natural hint of sweetness.” It’s one of those cheeses that plays nicely with both sweet and savory foods. I also love Dubliner cheese and tart apple sandwiches with a little drizzle of honey. It’s not the cheapest cheese on earth, but it’s also not an ungodly expensive artisanal cheese. We’re not doing too many artisanal cheeses around here unless my brother comes to visit with some fancy schmancy cheese from San Francisco (perhaps a nice aged mimolette?). But, I digress, because I love cheese. The sandwich is really the shining star of this lunch. The rest is fairly basic: some crunchies (pretzel slims and crazy colored tortilla chips) and some fruit (strawberries and pears).
