After making salmon salad sandwiches for yesterday’s lunch, I had a little salmon salad left over. Then, after dinner, I had a little pasta left over. Hmm, another creative salad in the making: salmon pasta salad with edamame. I microwaved some frozen edamame and tossed them with the pasta and salmon salad. A little sprinkle of black pepper. Done. Easiest lunch ever. For salty little crunchies, I packed some Original Goldfish (no flavor, how novel) and edamame rice crackers. Those gorgeous slices of fruit are pear and apple rubbed with some lemon juice to keep them fresh. Mmm, yummy Friday lunch.
