After a couple of rather complicated lunches—you know, trying to use up the hard boiled eggs and all—I decided to keep it simple today. The sandwich is salmon salad (canned salmon, dill pickles, sweet pickle relish, and mayo) on whole wheat bread. Mmm, I just love salmon salad. Had I been more motivated I would have loaded it up with veggies chopped in the Vitamix like my Veggie-laden Tuna Salad of Awesomeness. Next time. Sides today are carrots from our garden, cucumbers from the grocery store, black olives from a can, strawberries from the farmers market and some dried mango (this stuff is like candy) from Trader Joe’s.
