Lunch today features the always popular mini pita pizza bites. So easy: mini whole wheat pitas, marinara sauce and shredded mozzarella cheese. They take about 10 minutes in a 400 F oven, depending on how melty/brown you like your cheese. I also threw in a little baked oatmeal cupcake which was left over from last week (I put the extra little oatmeal cups in the freezer). I’ve decided that I need to have little baked oatmeal cupcakes in the freezer at all time—they are a perfect mid-morning snack, especially with a dollop of Greek yogurt on top.
