Today I have one sick kiddo at home and one healthy kiddo who got to enjoy this fun lunch at school. The Greek yogurt concoction has Grape Nuts (my favorite inexplicably-named cereal), raw sunflower seeds, blueberry jam and some shredded coconut. Mmm, that looks good. The little Nilla Wafer sandwiches (with sunflower seed butter and apple slices) I made last week were a big hit. That’s no surprise, because Nilla Wafers are incredibly awesome. I only allow myself to buy about two boxes of Nilla Wafers a year, because I can’t stop eating them and, let’s face it, they aren’t exactly health food. For a while, Trader Joe’s carried their slightly less chemically-enhanced, not so high fructose corn syrupy version of Nilla Wafers, and, I have to say, they weren’t as good at the original. One time in a fit of frugality, I bought a generic brand of Nilla Wafers. Again, not as good as Nabisco’s original formula. I don’t know what’s in those things…natural and artificial flavor, crack cocaine, etc. Okay, I think I’ll go eat some of those delicious little devils right now.
