Radiatore with tempeh marinara—seriously, what a great combination of words (and flavors). Tempeh is a great non-meat meaty addition to pasta sauce. To be honest, I didn’t know much about tempeh until fairly recently. It’s a less processed soy product than tofu with a nuttier, more complex flavor and texture. For a yummy pasta sauce, just brown a package of tempeh with some onion and plenty of garlic before adding crushed tomatoes, spices, etc., or a decent jar of marinara sauce. Today’s lunch has a hearty kid’s portion of leftover pasta from last night’s dinner. I sprinkled plenty of parmesan on the pasta, because the kiddos are nuts about parmesan. I also included a small serving of plain Greek yogurt with blueberry jam. Fruits and veggies are half a satsuma, carrots and cucumbers. I’m still working those chocolate graham Goldfish for the treat.
