Can overnight oats be decadent? These overnight oats sure are, thanks to the addition of sweet dried cranberries and dark chocolate chunks. The oats are also loaded with healthy stuff like mashed banana, pepitas, and chia seeds; I made a big batch, so I could have some myself for a mid-morning snack. When I’m teaching, I love to have a little container of overnight oats in my office for when I’m inexplicably starving at 10:30am. I soaked the oats is Trader Joe’s vanilla soy milk, which is pretty sweet, so I didn’t have to add any additional sweetener. The dark chocolate chunks are Enjoy Life Mega Chunks, which are pretty much everything-free. According to the allergen info on the Enjoy Life website, these baking chocolate chunks are: “Gluten Free, Wheat Free, Dairy Free, Peanut Free, Tree Nut Free, Egg Free, Soy Free, Fish Free, Shellfish Free.” Huh? I never knew chocolate to contain shellfish, but whatever. You can safely feed this chocolate to just about anyone, unless, of course, they have an allergy to chocolate. To go along with the decadent overnight oats, I also included honey graham crackers and sliced carrots with a little ranch dressing (in the adorable polka dotted container) on the side. With the exception of the ranch, this lunch is totally deliciously vegan.
*Uncooking Tip: Decadent Overnight Oats
- 1 cup rolled oats
- 2 cups milk of your choice
- 2 tablespoons chia seeds
- 1 mashed very ripe banana
- small handful of sweet dried cranberries
- small handful of pepitas
- 1/4 cup chopped dark chocolate, or everything-free Enjoy Life Mega Chunks (no chopping required)
Mix everything together in a container with a lid. Put it in the fridge overnight. Enjoy the next day. I love cold overnight oats, but if this freaks you out, feel free to warm up the oats in the microwave. Come to think of it: the chocolate would get all melty, which would be even more decadent. Serves 3–4.
