It is a great thing if you can get your kids to eat hummus, because it’s cheap (especially if your make your own), plant protein-packed, and it encourages vegetable consumption. Plus, isn’t a hummus plate pretty? For hummus-dipping, I’ve included steamed broccoli, carrots, sweet red peppers and Triscuits (actually, Target’s version of Triscuits—woven wheat something or other). Fruit today is cantaloupe and the treat is mixed berry fruit strips cut into little pieces. Happy weekend. We’ll be spending it in Santa Barbara to celebrate the end of my teaching quarter and the beginning of my first ever sabbatical. I’ve turned in my grades and sent my students on their way. Whee! Now I’ll have time to make even more elaborate lunches.
