It’s pomegranate season here, so we are taking advantage of the abundant deliciousness. This lunch is super easy to make provided you have already done the messy, meticulous work of getting the seeds out of the pomegranate. That purplish stuff underneath the pomegranate seeds is a mixture of Greek yogurt and blackberry jam. I like to buy plain Greek yogurt and mix in sweeteners such as jam, honey, applesauce, etc.—much cheaper and healthier. Plus, I’m a control freak. Multigrain crackers with slices of colby jack cheese are the Lunchables portion of today’s meal. For fruit and veggies, we have little carrots, grapes and plums. Also, I just couldn’t resist the Halloween colored version of candy coated chocolate sunflower seeds (now available for a limited time at Cost Plus World Market).
